Aïtor Alfonso aka Sauce Gribiche

Prep teacher and gastronomy journalist (Le Fooding, Time Out, Omnivore), Aïtor Alfonso also delights Instagram with his memes about foodies under the pseudonym Sauce Gribiche. In 2023, he published with the designer Jul “The hunger for history” with Dargaud, a fascinating illustrated essay which tells 20,000 years of history through the prism of the plate. A comic book which is already a bookstore success and which he has signed with Patine!

Benoït d'Onofrio aka Le Sobrelier

Benoît studied music, philosophy and visual arts while being intensely involved in different musical projects. Sommelier since 2010 in different Parisian establishments, he broadened for the first time the scope of his sommelier activities to the creation and development of non-alcoholic drinks during a first residency alongside chef Manon Fleury and continues his neo-sobrelier profession alongside him by offering hybrid or entirely alcohol-free food and drink pairings.

Since 2023, he has multiplied collaborations with figures of the new gastronomic scene such as Harry Cummins (La Mercrerie, Marseille), Merlin Labron-Johnson (Osip, Bruton), Céline Pham (Inari, Arles)... as well as with with the Refettorio Paris team.

He also trains hotel school students, professionals and individuals in the challenges and techniques of creating non-alcoholic drinks.
